One thing I love about Nigerian dishes, they always taste savoury, and they remind me of our rich African culture and nature, from the tasty Jollof rice to the wonderful aroma of Efo riro, and steaming pleasure from a plate of moi moi. Yummy! Right?

I get intrigued when I hear some say, I really don’t know how to prepare Efo riro, or I don’t  know how to prepare that delicious jollof rice. It is usually not difficult. I was once in that category, I always felt jollof rice was a big deal but, after much observation I discovered there are some few things to put into consideration.

Something I say often to everyone who asks me, how I come up with a particular type of dish, “when it comes to cooking it’s all about creativity”. All you need is the basic knowledge about what you are doing; creativity without basic knowledge is catastrophic. Today I would run you through 5 dishes on my list.

  • Jollof rice
  • Ofada sauce
  • Efo riro
  • Moi moi
  • Pepper soup

It’s important to know that there are some similarities in the ingredients for the mentioned dishes, from observation, the type of pepper used and spice would vary (I won’t delve on spice and herbs today, it would be a whole lot. I advise you watch this space for more information about that).

  • Jollof rice

You need stock for this dish (stock water is simply the water you get from boiling any of your desired protein, personally I love chicken stock). We move to the type of pepper to be used, tomatoes, red bell pepper (tatashe), scotch bonnet (A variety of chilli pepper “Atarodo”), cayenne pepper (Shombo). I advise lots of tomatoes and red bell pepper and a little of scotch bonnet and cayenne pepper don’t forget ginger and garlic they being ginger to the dish.

  • Ofada sauce

This depends on you, if you decide to use the dry variety of pepper for this or the raw ones, the ball is in your court just make sure the combo should be  red bell pepper, scotch bonnet, cayenne pepper lots and lots of onions. And make sure to bleach the oil, you also need stock for this sauce (goat meat stock is recommendable I love it personally for this dish).

  • Efo riro

This one is not in any way stressful, red bell pepper (little quantity), scotch bonnet, stock and onions (I don’t blend my pepper to form a paste).

  • Moi moi

This meal needs scotch bonnet, cayenne pepper, a little red bell pepper and stock very necessary.

  • Pepper soup

  • Some people think it takes a good cook to prepare this, all you need is to get pepper soup in the market, life made easy already mixed pepper soup spice are available for sale. Get them , boil water for the protein (goat meat highly recommended) add scotch bonnet to it, add your spice with seasoning to taste, like I said earlier it’s about creativity.
